Fruit Cereal Protein Muffins
If you're a Muscle Egg lover like I am, then you know that this versatile product can really add some sweet flavorful protein to almost any meal. Here's a great recipe for protein muffins that will leave you feeling like you're having Fruity Pebbles for breakfast again like you did as a kid.
Fruit Cereal Protein Muffins
Makes 12 muffins
Macros for 1: 102 cal/10P/1F/13C
Ingredients:
2 cups dry oatmeal (not quick oats)
16 ounces Muscle Egg (used fruit cereal but any flavor will work)
16 ounces plain egg whites from the carton
150g mashed bananas
2 teaspoons vanilla extract
2 teaspoons baking powder
1 full dropper of Stevia extract
Directions:
Preheat oven to 350 degrees. Spray a muffin tin with coconut oil spray and set aside.
Mix all ingredients together until well combined. Mixture will be very liquidy. Using a ladle, making sure to get oatmeal with each scoop, divide into 12 muffin tins. Fill each tin all of the way to the top. Bake for 5 minutes, then pull out tin slightly and top with sprinkles (optional). Continue to bake for about 25 minutes until cooked through. Remove from oven and let cool. Store in an airtight container in the fridge for up to 4 days.
